Paola Trujillo, a dedicated coffee grower, pursued chemical engineering before choosing to preserve her family's coffee legacy at Patio Bonito Farm in Cauca, Colombia. She has mastered all stages of coffee cultivation and continually enhances quality and processing methods. Her parents, Maria Angela and Carlos, inspired her journey by valuing knowledge sharing and involving her in the coffee project. Paola now trains the next generation of coffee farmers, fostering a passion for the industry and maintaining the regional coffee legacy.
The Wush Wush coffee variety, originally from Wushwush, Ethiopia, is celebrated for its elegance and unique characteristics. Introduced to Colombia in the early nineties, this heirloom variety has thrived at Patio Bonito Farm. Known for its wild and temperamental nature, Wush Wush is meticulously processed to highlight its best qualities, enhancing the farm's reputation for producing exceptional specialty coffee.

Extraction: 20%Patio Bonito dialed similarly to other our other recent Colombian coffees (like San Pedro and Aruzi). The final cup should be bright and sweet like tamarind and blackberry with floral aromatics.

This coffee brews fast and extracts easily. We’ve found coffees that push the limits of fermentation are more soluble, leading to faster brew times and quick extractions. To slow the brew time and bring out the vibrant acidity and syrupy body of this coffee I recommend using 21g of coffee. A well extracted brew should have an intense, lingering sweetness with dynamic flavors like passionfruit, dark chocolate, strawberry liqueur, and florals.

The Finca Hawaii Mokka tasted best at a finer than neutral grind size to achieve a densely sweet cup with a full body and crisp malic acidity.
