Sensory Description:
A well-dialed cup of Mokka presents with an extremely unique Raspberry Greek Yogurt tasting note. This is a pleasant combination of sweetness and tartness with a lactic acidity. Lactic acidity, the kind of acidity common in Greek yogurt, is often present in coffee more as a mouthfeel than as a flavor. This coffee, however, has both. It also boasts a deep sweetness that lingers for quite a while on the palate. This is a coffee that really expresses its unique characteristics more as it cools.
Please note that this coffee hits relatively high extraction percentages at quite quick brew times. Don’t be afraid of brew times on the very low end of our parameters.
Dial Notes:
Under extraction was sour and unpleasantly tart - similar to the raspberry tasting note on the bag but with no sweetness to back it up. It was also noticeably thin and lacking a lot of texture. It’s for this reason that we recommend a somewhat significant up-dose to 22g.
Over extraction completely obscures the vibrant and complex lactic acidity of this coffee. It also mutes the rich sweetness. In less-extreme instances, over extraction will make this coffee taste somewhat pleasant but will not highlight the unique characteristics of this rare varietal.

This coffee brews fast and extracts easily. We’ve found coffees that push the limits of fermentation are more soluble, leading to faster brew times and quick extractions. To slow the brew time and bring out the vibrant acidity and syrupy body of this coffee I recommend using 21g of coffee. A well extracted brew should have an intense, lingering sweetness with dynamic flavors like passionfruit, dark chocolate, strawberry liqueur, and florals.
