Jairo and Felipe Arcila are pushing the boundaries of fermentation farther than any other I’ve encountered. More than 50 hours Anaerobic, 70 hours Aerobic, and 70 hours of fermentation mid drying flirts with the edge of what’s possible but creates one of the most exciting cups in Colombia. This is one of our favorite and controversial coffees every year!

Grind: 8.3/10

Bloom: 1:2 for 30s

Total Brew: 2:30

We recommend a continuous pour for more acidity; this coffee brews quickly and grinds a bit coarser than typical single origins.
