Paola Trujillo, a dedicated coffee grower, pursued chemical engineering before choosing to preserve her family's coffee legacy at Patio Bonito Farm in Cauca, Colombia. She has mastered all stages of coffee cultivation and continually enhances quality and processing methods. Her parents, Maria Angela and Carlos, inspired her journey by valuing knowledge sharing and involving her in the coffee project. Paola now trains the next generation of coffee farmers, fostering a passion for the industry and maintaining the regional coffee legacy.

The Wush Wush coffee variety, originally from Wushwush, Ethiopia, is celebrated for its elegance and unique characteristics. Introduced to Colombia in the early nineties, this heirloom variety has thrived at Patio Bonito Farm. Known for its wild and temperamental nature, Wush Wush is meticulously processed to highlight its best qualities, enhancing the farm's reputation for producing exceptional specialty coffee.

Dose: 22g

Ratio: 1:15.5

Grind: Slightly Finer

Bloom: 1:2 for 30s

Total Brew: 2:51

TDS: 1.45

Extraction: 19.34%

I found this coffee pretty challenging to dial in. It was very unforgiving of a high extraction percentage, and tasted best very close to the lower end of our brew parameters, not offering much margin of error in either direction.
