Among their contributions, the discovery of the Chiroso variety stands out. Named after a rural Colombian slang term for its shape, Chiroso has intrigued researchers. Unlike the Bourbon-Typica group, preliminary studies suggest it is genetically linked to Ethiopian landrace varieties, highlighting coffee’s global diversity.

Their mastery of the EF2 process—where cherries undergo controlled fermentation below 22°C for intense flavor profiles before natural drying—further showcases their commitment to innovation and quality.
