Sensory Description:
This naturally processed Sudan Rume presents with a rich and fruity sweetness when well dialed. With tasting notes of cherry and tamarind, there is a perceptible lively acidity that accompanies the tropical sweet characteristics, resulting in a bright and complex cup. You’ll also find a pleasant sugar-browning flavor similar to toffee – the combination of cooked sugar and butter. The result is similar to a tropical fruit pastry.
Dial Notes:
When under-extracted, I found this coffee tasted like unripe cherries – a little more tart and a little less sweet than it should be. This also resulted in a lack of lingering sweetness that you would expect from a note like toffee.
When over-extracted, the fruity characteristics were slightly overpowered by more nutty and caramel-like flavors. While still sweet, the coffee missed out on the brightness that adds to the complexity of this unique varietal.
