Sensory Description:
Sadayana is an expression of the terroir of West Java, where oftentimes it’s hidden by wet hulling, it is brought out with crisp acidity and clarity of washed process in this coffee. The dialed cup is soft and full-bodied with a chocolate forward flavor profile with notes of honey, almond, vanilla, and mandarin orange.
Dial Notes:
Under-extracted brews of Sadayana will be sour without any sweetness to balance. The citrus notes will taste like underripe citrus in the under extracted brew. I found over-extracted brews to lack the delicate notes like vanilla and honey while predominantly tasting like a bitter browned butter. With Indonesian coffees having such spice and chocolate notes it’s easy to mistake over-extraction for being dialed, however this coffee, due to it being a washed process, should have a bright, crisp acidity.
